Rock. Rather than picking up every odd shaped rock, I recommend you look at the rocks to see if there are regular shapes in them or things that are a radically different color or texture. For example, a shell or trilobite will dissolve away and the resulting void may later be filled in by a different material. Fossils will often really stand out from the background rock and be fairly obvious.
